Ingredients
❍ 1 pound elbow noodles
❍ 2 cups extra sharp white cheddar cheese
❍ ¼ cup butter
❍ ¼ cup flour
❍ 1 cup milk
❍ 2 cups heavy whipping cream
❍ ½ teaspoon salt
❍ ½ teaspoon pepper
❍ 1 teaspoon dry mustard
❍ Bread crumbs

Directions
1. Cook Noodles: In a large pot, bring 2 quarts of water to a boil. Cook noodles according to package directions. Drain and set aside.
2. Make roux:
In a large pot, melt butter over medium heat. Slowly whisk in flour and cook for about 1 minute, until thickened.
3. Create sauce base:
Whisk in milk, heavy whipping cream, salt, pepper, and dry mustard. Continue stirring until the mixture becomes bubbly and slightly thickened.
4. Add cheese:
Stir in cheese until fully melted and smooth. (Cut or shred cheese into small pieces so it melts quickly.)
5. Combine:
Add the cooked noodles to the cheese sauce and stir until well coated.
6. Top and broil:
Sprinkle bread crumbs evenly over the top. Place in the oven and broil for about 2 minutes, or until the bread crumbs are golden brown.
7. Optional:
Top with green onion.
