Ingredients
❍ 1 package refrigerated biscuits
❍ 1 lb regular breakfast sausage
❍ ¼ lb bacon, diced
❍ 1 cup onion, diced (yellow or white)
❍ 2 tsp shortening (crisco)
❍ ¼ cup flour
❍ 4 cups milk (plus more if needed)

Directions
1. Bake biscuits according to package directions.
2. In a large skillet over medium heat, cook sausage, diced bacon, and onions until browned and fully cooked.
3. Drain excess grease if needed.
4. Add shortening to the skillet and allow it to melt.
5. Gradually whisk in flour, stirring constantly, until a roux forms (thick, paste-like consistency).
6. Add an additional 1/2 tbsp of flour to achieve consistency.
7. Slowly add milk, about 1 cup at a time, whisking continuously to prevent lumps.
8. Continue cooking over medium heat, stirring frequently, until the gravy thickens to desired consistency.
9. Add more milk if it becomes too thick.
10. Season with salt and pepper to taste. Split biscuits and serve topped with warm gravy.
