Looking for a recipe that is quick, easy and sure to please the whole family? Creamy chicken enchiladas is a must add recipe to your family’s recipe box! If you have a busy week ahead this is a great meal to prepare the day before and keep it in the refrigerator until your ready to cook!
What you will need:
3 chicken breasts, cooked and diced (or shredded)
1 22.6 ounce can cream of chicken soup (family size)
½ cups enchilada sauce
¾ cup sour cream
½ cup salsa
1 teaspoon chili powder or seasoning
1 teaspoon Bolner’s Fiesta Extra Fancy Fajita Seasoning
1 cup shredded cheddar cheese
5-6 large tortillas
Garnish with green onions
Preheat oven to 350°
In large bowl combine cream of chicken, enchilada sauce, sour cream and seasonings, then add shredded cheddar cheese.
In 9 x 13 glass baking dish spread a layer of mixture (so the tortillas do not stick)
Spoon out 1/3 of the mixture and place in a separate bowl (for the enchilada filling) Mix in the chicken.
Warm tortillas in microwave for 30 seconds.
Spread chicken mixture onto each tortilla and roll up place in baking dish.
Spread the remaining mixture over the top
Garnish with green onions and bake at 350° for 30 minutes.
Serve with Salsa, Black Beans and Spanish Rice
